Ingredients:
1 ½ cups All-Purpose Flour (spooned into measuring cup
and leveled off)
1 ½ teaspoons Baking Powder
½ teaspoon Salt
6 tablespoons Unsalted Butter (softened, plus more for
greasing the pan)
1 cup Sugar (plus 2 tablespoons, divided)
1 Large Egg
1 teaspoon Vanilla Extract
½ cup Milk (low fat is fine)
¾ pound Strawberries (hulled and halved)
Instructions:
Preheat your oven to 350°F (175°C). Grease a 9-inch round
cake pan.
In a medium bowl, whisk together the flour, baking
powder, and salt.
In a large bowl, beat the butter and 1 cup of sugar until
pale and fluffy. Add the egg and vanilla and beat until combined.
Gradually add the flour mixture in three parts,
alternating with the milk, beginning and ending with the flour mixture.
Spread the batter into the prepared pan. Arrange the
strawberry halves on top of the batter and sprinkle with the remaining 2
tablespoons of sugar.
Bake for 10 minutes, then reduce oven temperature to
325°F (160°C) and bake for about an hour, or until a toothpick inserted into
the center comes out clean.
