Shakshuka

 



 One, of the most beloved Israeli dishes is Shakshuka, a flavorful combination of poached eggs in a hearty tomato and pepper sauce. Here’s a simple recipe for you to try:

 

Ingredients:

 

1 tablespoon olive oil

1 medium onion, diced

1 red bell pepper, seeded and diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

1/4 teaspoon cayenne pepper (optional, for heat)

1 can (28 oz) whole peeled tomatoes

6 large eggs

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Feta cheese, crumbled (optional, for garnish)

Instructions:

 

Heat olive oil in a large skillet over medium heat. Add onion and bell pepper, and cook until the vegetables are soft, about 5 minutes.

Add garlic, cumin, paprika, and cayenne pepper. Cook for another 2 minutes, until fragrant.

Pour in the tomatoes and break them down with your spatula. Simmer the sauce for 10-15 minutes until it thickens slightly. Season with salt and pepper.

Create small wells in the sauce and gently crack the eggs into each well. Cover the skillet and cook until the eggs are done to your liking, about 5-7 minutes for soft yolks.

Garnish with chopped parsley and crumbled feta cheese, if using.

Serve hot with a side of crusty bread or pita to soak up the delicious sauce.
