Ingredients:
300 grams of pasta flour (plus extra for dusting)
2 whole eggs and 4 egg yolks, lightly beaten
Semolina flour (for dusting)
Instructions:
Place the pasta flour in a mound on a clean work surface.
Make a well in the center.
Add the eggs and egg yolks into the well.
Gradually incorporate the flour into the eggs using a
fork, working from the inside of the well outwards, until a dough starts to
form.
Knead the dough by hand for about 10 minutes until it’s
smooth and elastic. Add a little more pasta flour if the dough is too sticky.
Wrap the dough in plastic wrap and let it rest at room
temperature for about 30 minutes.
After resting, cut the dough into quarters. Flatten one-quarter
with a rolling pin or your hands into an oval disk.
Dust the dough lightly with semolina flour and pass it
through a pasta machine starting at the widest setting. Fold the dough in half
and pass it through again. Repeat this process, reducing the setting each time,
until you reach the desired thickness.
Cut the pasta sheets into your preferred shape, dust them
with semolina flour, and let them dry for a bit before cooking.
To cook, bring a large pot of salted water to a boil. Add
the pasta and cook for 2-4 minutes until al dente.
Drain the pasta and serve with your favorite sauce.
