Mexican Corn on the Cob

  



Mexican corn on the cob is a delicious and easy-to-make side dish. It is perfect for summer barbecues, picnics, or any time you want a flavorful and satisfying snack.

 

Ingredients:

 

6 ears of fresh corn on the cob

1/2 cup mayonnaise

1/4 cup cotija cheese, crumbled

1 tablespoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1 lime, juiced

Instructions:

 

Preheat your grill to medium-high heat.

Shuck the corn and brush the cobs with mayonnaise.

Sprinkle the corn with cotija cheese, chili powder, cumin, garlic powder, salt, and pepper.

Grill the corn for 10-12 minutes, or until charred.

Squeeze lime juice over the corn.

Serve immediately.

Tips:

 

For a spicier corn, add more chili powder.

You can also use other types of cheese, such as Monterey Jack or Cheddar.

If you don't have a grill, you can cook the corn on the stovetop in a large pot of boiling water for 5-7 minutes.

Serve the corn with your favorite toppings, such as sour cream, hot sauce, or butter.
