Set
your sous vide to 167 degrees Fahrenheit.
Cook
the bacon until it is crisp.
In
a mixer, combine the eggs, cottage cheese, Monterey Jack cheese, Gruyere
cheese, and salt.
Blend
until the mixture is smooth.
Using
a nonstick mist, coat four tiny canning pots.
Place
a slice of bacon into each pot.
Fill
jars halfway with egg mixture.
Wipe
the rim of the container to ensure it is clear, then replace the seal.
Ascertain
that the sous vide has crossed 167 degrees.
Place
the jars in the sous vide machine.
Cook
the eggs for 35 minutes, or until the egg bites are fully set.
Take
the egg bites out of the jars.
Sprinkle
with sliced Gruyere cheese and broil until golden brown.
