Try this recipe for a crispy duck with a delicious sauce.
Ingredients
1 duck 5 lbs
or more
1/2 tsp salt
1/4 tsp
pepper
SAUCE
3/4 cup
packed brown sugar
1 tbsp
butter
2 tsp grated
orange zest
3/4 cup
orange juice
4 pieces
thinly sliced orange
Clean and
thoroughly dry the duck. Remove any excess fat from the cavity. Prick the skin
at 1-inch intervals throughout the bird.
Preheat the
oven to 400°F.
Place the
bird, breast side up, on a rack in a large roasting pan.
Season the
bird with salt and pepper.
Roast for
40-45 minutes, then prick the skin again and slide the bird breast down.
Prick the
skin again and turn the bird breast side up for another 40-45 minutes.
Take out the
bird from the oven and cover it loosely with foil for at least 20 minutes.
Meanwhile,
make the sauce by combining all the sauce ingredients in a small saucepan.
Bring to a boil, stirring constantly. Reduce the heat to medium-low and gently
boil until the sauce resembles pancake syrup. This should take approximately 15
minutes.
Brush some
of the sauce over the duck.
Serve the
duck in quarters with additional sauce.
