Try these German Potato Cakes on their own or as a side dish.
INGREDIENTS
3 lbs potatoes peeled
1 large onion, quartered
3 eggs, beaten
1⁄2 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 tablespoon parsley
Cover the potatoes in cold water until ready to grate in the
food processor.
Shred the potatoes and onion in the food processor using the
medium shredding blade.
Dry the potatoes and onion between paper towels. Combine the
potato mixture, eggs, flour, baking powder, parsley, and salt in a large mixing
bowl. Heat 1/8 inch vegetable oil in a large skillet until hot. Pour in 1/3 cup
potato mixture, flattening with the back of a wooden spoon, and fry for 3
minutes per side, or until crisp and golden brown on both sides. Keep warm in a
100°F oven after draining on paper towels.
Pair with applesauce.
