This recipe for homemade chicken chimichangas tastes just like your favorite Mexican restaurant's deep-fried burrito, however, they're homemade, taste great, and are ridiculously simple to put together. Store-bought, Rotisserie chicken, refried beans, green chiles, and cheese are stuffed into tortillas before being deep-fried without the grease in an air fryer!
Ingredients
2 teaspoons vegetable oil
2 cups shredded store-bought rotisserie chicken
1 packet .85 oz Chicken Taco Seasoning Mix
3 tablespoons water
¾ cup from 1 can 16 oz Traditional Refried Beans
1 can(4.5 oz chopped green chiles
8 flour tortillas 6 inch
1 cup shredded Cheddar cheese 4 oz
2 tablespoons butter melted
Heat the oil in a 10-inch nonstick skillet over medium
heat. Stir in the chicken, taco seasoning mix, and water until evenly coated.
Cook uncovered for 4 to 5 minutes, stirring frequently, until the chicken is
thoroughly heated.
Combine beans and chiles in a small mixing bowl. Spread
about 3 tablespoons of the bean mixture in the center of the tortilla on the
work surface. Add about 1/4 cup of the chicken and 2 tablespoons of the cheese
on top. Fold the tortilla's sides in. Fold the bottom over the filling and the
sides. Enclose the filling by rolling tightly. Rep with the remaining tortillas.
Brush the outside of each filled tortilla with melted butter; place four in the
air fryer basket, seam side down. Preheat the oven to 400°F and cook for 4
minutes. Cook for 2–3 minutes more until
lightly browned and heated through. Rep with the remaining four filled
tortillas.
