A sweet treat that’s great to enjoy with your love, on a romantic evening.
Ingredients
2 Graham crackers
½ tablespoon butter
3.5oz low-fat cream cheese
2 tablespoons fat-free sugar-free yoghurt
2 tablespoons granulated sugar
1 medium egg white
1 teaspoon vanilla extract
1 teaspoon lemon juice
Crush the Graham crackers into crumbs in a food processor or with a
mortar and pestle.
Microwave the butter in a small microwave-safe bowl for 30 seconds on
high, or until melted. Pour in the crushed Graham Crackers and stir until
completely absorbed.
Divide the mixture evenly between two greased ramekins and press down
to form a base. Microwave for 1 minute on high, or until puffy.
In a separate small mixing bowl, combine the cream cheese, yogurt,
sugar, egg white, vanilla extract, and lemon juice and beat until light and
fluffy. Divide the mixture evenly between the two ramekins. Given that the
cheesecakes will puff up while cooking, leave at least 0.5 inches at the top.
Microwave the cheesecakes for 3 minutes, till the edges are firm but
the center is still somewhat wobbly. Allow to cool to room temperature before
chilling in the fridge for at least 4 hours.
