Blueberry Chipotle BBQ glazed pork tenderloin, grilled, cooked to perfection, and provided al fresco for the ideal summer evening dinner. Two flavors at the same time, sweet and hot. Everyone will want your recipe.
Ingredients
Blueberry Chipotle BBQ Sauce homemade or store-bought
4 Tbs Butter
2 Cups frozen or fresh blueberries
1 cup Ketchup
1 Tbs Apple Cider Vinegar
2 Tbs Brown Sugar
1/3 cup of your favorite Chipotle Hot Sauce
Pork Tenderloin
2-3 lb pork tenderloin
1 Tbs Kosher salt
Blueberry Chan Chipotle BBQ Sauce
Put everything in a heavy saucepan and bring to a
boil.
Stir well, turn down, and let simmer for 5-10 minutes.
Pour contents into a blender or food processor
and blend or process until smooth.
Store in an airtight container for up to a week.
Grilled pork tenderloin
Remove the tenderloin from the refrigerator 30
minutes before grilling.
Set the grill to 400 degrees.
Tenderloin should be liberally salted on all
sides before being placed on a hot grill.
Grill with the lid closed. depending on size,
8-10 minutes
Grill and flip for 4-5 minutes more.
Cook for an additional minute after brushing on
Blueberry Chipotle BBQ sauce, or until an instant 145-150 degrees on a meat
thermometer inserted in the center.
Remove from the grill, brush with more sauce, and
set aside for 3-5 minutes before serving.
