Ice Cream

Homemade Chocolate Ice Cream Recipe Without an Ice Cream Maker

Ingredients

Milk: A creamy flavor but with fewer calories. You can substitute this with skinny milk, but it will be less creamy.

Dark chocolate: Use chocolate that contains at least 58% cocoa1.

Sugar and honey: Sweeteners in this ice cream

Vanilla extract and salt: Both vanilla and salt enhance the chocolate flavor1.

Cornstarch: Makes the ice cream a bit thicker

Cream and honey: Add the cream and honey to a bowl and whisk until it’s stiff.

Steps

Cool all the ingredients: When the chocolate is melted take the bowl off the heat and let it cool down to room temperature. Cover it with plastic foil and put it into the refrigerator. Let it cool down for at least 2 hours.

Mix all the ingredients: Add the cream and honey to a bowl and whisk until it’s stiff. Take the bowl with the chocolate mixture from the refrigerator and mix the salt, cornstarch, and vanilla extract. Then mix the cream with a spatula gently through the chocolate.

Make chocolate without a machine: Pour the mixture into a freezer box and put it in the refrigerator for at least 3 to 4 hours.

Cast Iron Pans

The Magic of Cast Iron Pans

Introduction

Cast iron pans have been a staple in kitchens for centuries, and for good reason. They’re durable, versatile, and, when properly cared for, can last for generations.

The Benefits of Cast Iron

Cast iron pans are known for their excellent heat retention and even heat distribution. This makes them perfect for a variety of cooking methods, from frying and sautéing to baking. They’re also oven-safe, so you can start a dish on the stovetop and finish it in the oven without needing to change pans.

Seasoning Your Pan

One of the unique aspects of cast iron pans is the need for seasoning. This process involves coating the pan with a thin layer of oil and heating it to create a natural, non-stick surface. Not only does this make cooking and cleaning easier, but it also helps to protect the pan from rust.

Cooking with Cast Iron

When it comes to cooking with cast iron, the possibilities are endless. Whether you’re making a perfectly seared steak, a fluffy frittata, or a batch of crispy roasted potatoes, a cast iron pan can handle it all. And the more you use it, the better it gets, as the flavors of past meals contribute to the seasoning of the pan.

Caring for Your Cast Iron Pan

After cooking, clean your pan with a brush and hot water, avoiding soap as it can strip the pan’s seasoning. Dry it thoroughly to prevent rusting and apply a light coat of oil before storing.

Conclusion

In conclusion, a cast iron pan is a valuable addition to any kitchen. With proper care and regular use, your cast iron pan can provide you with a lifetime of delicious meals.

The Sunshine State’s Liquid Gold: Florida Oranges

Florida, the Sunshine State, is renowned for its vibrant citrus industry, with oranges at the heart of it. The state’s subtropical climate, abundant sunshine, and well-drained, sandy soil provide the perfect conditions for growing oranges.

A Brief History

The history of Florida oranges dates back to the 16th century when Spanish explorers introduced citrus trees to the region. Over the centuries, the industry has faced numerous challenges, including freezes, diseases, and hurricanes. Yet, it has always bounced back, demonstrating the resilience of both the trees and the farmers.

Varieties of Florida Oranges

Florida is home to several varieties of oranges, including the popular ‘Valencia’ and ‘Hamlin’. Valencia oranges, known for their exceptional juice content and slightly tart flavor, are typically harvested from March through June. On the other hand, Hamlin oranges, which are sweeter and have thinner skin, are harvested from October through December.

Health Benefits

Florida oranges are not just delicious; they’re also packed with nutrients. They’re an excellent source of vitamin C, which boosts the immune system, and they’re rich in fiber, promoting digestive health. Plus, they contain antioxidants that help fight off harmful free radicals.

Florida Orange Juice

When it comes to orange juice, nothing beats the fresh-squeezed taste of Florida oranges. The state produces over 90% of the orange juice in the United States. Next time you pour a glass of orange juice, take a moment to appreciate the journey of those Florida oranges, from the sunny groves to your breakfast table.

Conclusion

Florida oranges are truly a testament to the state’s agricultural prowess. The next time you enjoy a juicy Florida orange or a refreshing glass of Florida orange juice, remember the rich history, hard work, and sunshine that went into producing that sweet, tangy flavor.

The heart ingredient of Mexican cooking

The Heart of Mexican Cuisine: Corn

!Image of Corn

Mexican cuisine is a vibrant tapestry of flavors, colors, and textures, with a history that spans thousands of years. At the heart of this culinary tradition lies an ingredient so fundamental, it’s often referred to as the “soul” of Mexican food:

A Staple of Ancient Civilizations

Corn, or maize, has been a highly praised ingredient in Mexico for thousands of years1. History tells us that the region near Tehuacán, in the state of Puebla, was where pre-Hispanic cultures began to domesticate corn1. It became a staple ingredient for cultures like the Maya, the Aztecs, and the Toltecs

The Invention of Nixtamalization

A key moment in the history of corn was the invention of nixtamalization, a process that consists of soaking corn kernels in an alkaline solution and peeling them1. The resulting soft corn is ground into masa (dough), which can be used to make tamales and, of course, tortillas1. Tortillas are essential in countless Mexican dishes, from tacos to enchiladas to quesadillas

Corn in Modern Mexican Dishes

Having corn in your kitchen opens up a whole world of possibilities for cooking1. You can make street food-inspired elotes, slathering corn on the cob with mayonnaise, queso fresco, and chili powder, or use those same toppings to enhance your esquites, with kernels swimming in a savory broth with epazote leaf1. Hominy corn is the star in a healing bowl of pozole, and if you’re in the mood for something sweet, you can whip up a comforting pan de elote (cornbread)

Conclusion

Corn is more than just an ingredient in Mexican cuisine; it’s a symbol of the country’s rich history and cultural heritage. So the next time you bite into a soft, warm tortilla or savor a spoonful of hearty pozole, remember that you’re not just enjoying a delicious meal - you’re partaking in a tradition that goes back thousands of years.

Fresh Parsley

 Italian Cooking with Fresh Parsley

Italian cuisine is renowned for its simplicity, with many dishes having only four to eight ingredients. Italian cooks rely chiefly on the quality of the ingredients rather than elaborate preparation. One such ingredient that is often overlooked but holds a pivotal place in Italian cooking is fresh parsley.

The Role of Fresh Parsley in Italian Cuisine

Fresh parsley, or “prezzemolo” as it’s known in Italy, is a staple in Italian kitchens. It’s used in a variety of dishes, from pasta and risotto to meat dishes and salads. Its vibrant green color and fresh, slightly bitter taste add a burst of flavor and a touch of elegance to any dish.

Incorporating Fresh Parsley into Your Italian Dishes

When using fresh parsley in your Italian dishes, remember that it’s best added towards the end of cooking. This way, it retains its color and flavor. Here are a few ideas:

Parsley Pesto: Swap out the basil for fresh parsley in your pesto for a unique twist on the classic sauce.

Gremolata: This is a traditional Italian herb condiment consisting of lemon zest, garlic, and parsley. It’s the perfect accompaniment to osso buco.

Parsley Salad: Toss whole parsley leaves with shaved Parmesan and lemon vinaigrette for a refreshing salad.

Pairing with Wine

No Italian meal is complete without a glass of wine. When cooking with fresh parsley, consider pairing your meal with a crisp white wine like Pinot Grigio or Vermentino. The acidity and citrus notes in these wines complement the fresh, herbaceous flavor of parsley.

Conclusion

Fresh parsley is more than just a garnish; it’s a key ingredient in Italian cooking. So next time you’re cooking an Italian meal, don’t forget to add a sprinkle of fresh parsley!

Ingredients:

300 grams of pasta flour (plus extra for dusting)

2 whole eggs and 4 egg yolks, lightly beaten

Semolina flour (for dusting)

Instructions:

Place the pasta flour in a mound on a clean work surface. Make a well in the center.
