Summertime Grilled Chicken Kabobs with Lemon and Herb Marinade




 Summer is the perfect time to fire up the grill and enjoy delicious grilled food. This recipe for grilled chicken kabobs is a great way to add some variety to your repertoire. Ingredients:

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

1/2 cup plain yogurt

1/4 cup olive oil

2 tablespoons lemon juice

1 tablespoon chopped fresh rosemary

1 tablespoon chopped fresh thyme

1 teaspoon dried oregano

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 red bell pepper, cut into 1-inch squares

1 green bell pepper, cut into 1-inch squares

1 yellow bell pepper, cut into 1-inch squares

1 red onion, cut into 1-inch wedges

1 zucchini, cut into 1-inch rounds

Instructions:

 

Whisk together the yogurt, olive oil, lemon juice, rosemary, thyme, oregano, garlic powder, salt, and pepper in a large bowl. Add the chicken cubes to the marinade and stir to coat. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours.

Preheat your grill to medium-high heat.

Thread the chicken cubes, bell peppers, onion wedges, and zucchini rounds onto skewers.

Grill the kabobs for 8-10 minutes per side, or until the chicken is cooked through and the vegetables are tender.

Serve the kabobs with your favorite dipping sauce, such as yogurt sauce, pesto, or barbecue sauce.

Tips:

 

If you don't have fresh rosemary, thyme, or oregano, you can use 1 teaspoon of dried herbs in place of each tablespoon of fresh herbs.

You can also add other vegetables to the kabobs, such as mushrooms, cherry tomatoes, or pineapple.

To prevent the chicken from sticking to the grill, you can spray the grill grates with cooking spray before grilling the kabobs.

Let the kabobs rest for a few minutes after grilling before serving to allow the juices to redistribute.
