One Pot Vegetable Stew

 



 This one-pot vegetable stew is a hearty and healthy dish that is perfect for a cold winter night. It is made with a variety of vegetables, including carrots, potatoes, celery, onions, and green beans. The stew is also packed with protein and fiber, making it a satisfying and filling meal.

 

Ingredients:

 

1 tablespoon olive oil

1 onion, chopped

2 carrots, chopped

2 celery stalks, chopped

2 cloves garlic, minced

1 pound potatoes, peeled and cubed

1 cup frozen green beans

1 (14.5 ounces) can of diced tomatoes, undrained

1 (14.5 ounces) can vegetable broth

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

Instructions:

 

Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened about 5 minutes.  

Add the carrots, celery, and garlic and cook for 5 minutes more.

Add the potatoes, green beans, tomatoes, broth, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the vegetables are tender.

Serve immediately.

Tips:

 

You can use any type of vegetable you like for this recipe.

This stew is also great for freezing. Simply freeze individual portions in airtight containers.

This dish is also a great way to use up leftover vegetables.
