Ingredients:
1 pound veal cutlets, pounded thin
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
1/4 cup chopped fresh oregano
2 cloves garlic, minced
1/41 teaspoon salt
1/8 teaspoon black pepper
1/4 cup olive oil
1/2 cup all-purpose flour
1 (28-ounce) can crushed tomatoes
1 onion, chopped
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions:
Preheat oven to 350 degrees F (175 degrees C).
Combine the Parmesan cheese, parsley, basil, oregano, garlic, salt,
and pepper in a large bowl.
Lay the veal cutlets out on a flat surface. Spread the cheese mixture
evenly over the cutlets.
Roll up the cutlets tightly and tie them with kitchen string.
Heat the olive oil in a large skillet over medium heat.
Dredge the braciole in the flour and brown on all sides.
Transfer the broccoli to a baking dish.
Add crushed tomatoes, onion, garlic, oregano, salt, and pepper in the
same skillet.
Bring to a simmer and cook for 5 minutes.
Pour the sauce over the braciole.
Cover and bake for 1 hour, or until the broccoli is cooked through.
Remove the braciole from the oven and let it rest for 10 minutes
before slicing.
Serve with the sauce and pasta.
Tips:
If you can't find veal cutlets, you can use boneless, skinless chicken
breasts or pork chops.
You can also add other ingredients to the cheese mixture, such as
chopped nuts, raisins, or sun-dried tomatoes.
If you don't have kitchen string, you can use toothpicks to secure the
braciole.
Serve the braciole with a side of pasta, such as spaghetti or
fettuccine.
