INGREDIENTS:
3 cups
frozen hash brown potatoes
3/4 cup
shredded pepper-jack cheese
1 cup cooked
ham, diced
1/4 cup
chopped green onions
4 eggs,
beaten
1 (12 fluid ounces)
can evaporate milk
1/4 teaspoon
ground black pepper
1/8 teaspoon
salt
Instructions:
Preheat oven to 350°F. Spray a 2-quart baking dish with cooking spray.
Spread hash
brown potatoes in the bottom of the prepared dish in a uniform layer. Season
with pepper jack cheese, ham, and green onions to taste.
Combine the
eggs, evaporated milk, pepper, and salt in a medium mixing bowl. Pour the egg
mixture into the dish over the potato mixture.
At this
time, the dish can be covered and chilled for several hours or overnight.
In a
preheated oven, bake for 40 to 45 minutes (or 55 to 60 minutes if made ahead
and chilled), or until a knife inserted into the middle comes out clean.
Allow standing
for 5 minutes before serving.
