This salad will blow your taste buds up. It is not only easy to make, but is so yummy.
7 oz rice noodles
1 medium carrot, julienned
1 red bell pepper, thinly sliced
1 cucumber, julienned
2 spring onions, thinly sliced
A handful of fresh cilantro, chopped
3
tablespoons peanut butter
1 tablespoon soy sauce
1 tablespoon honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 clove garlic, minced
1 teaspoon grated ginger
1-2 tablespoons water

pinch of chili flakes
After
cooking the noodles as directed on the package, drain and rinse with cool
water.
In a bowl, mix carrot, bell pepper, cucumber,
and spring onions.
For the dressing, whisk together peanut
butter, soy sauce, honey, vinegar, sesame oil, ginger, garlic, and water.
Combine noodles, dressing, and veggies. Add
some optional chili flakes and cilantro as garnish.
