Try my recipe for beer
braised collard greens. A twist I love to put on them. You will love it.
Ingredients:
2 tbl olive oil
1 medium onion
2 cloves garlic
12 oz beer (a beer like
Coors' Blue Moon works, or a Belgian White)
2 cups vegetable broth (or
1-2 bouillon cubes with 2 cups water)
1 lb collard greens
1 tbl brown sugar
1/2 tsp red pepper flakes
Cracked black pepper to taste
Chop the onion and chop the
garlic. Cook in a big pot of olive oil over medium heat until softened. Wash
the greens of collar and cut the roots. Break the mixture into 2 inch bits. Add
liquor, vegetable broth, collar greens, brown sugar, red pepper flakes and
black pepper to the bath. Place the lid on top and let the pot boil. When the
pot starts to simmer, stir it all and put the lid back on top. Decrease heat to
low and simmer until the collards are as soft as you want (it can be about 20
minutes and 2 hours). Mix in every 15 minutes or so. Love it!
