1 (5-7 lb) pork shoulder or Boston butt

 

3 tbsp paprika

 

1 tbsp garlic powder

 

1 tbsp brown sugar

 

1 tbsp dry mustard

 

3 tbsp coarse sea salt

 

1 ½ cups cider vinegar

 

1 cup yellow or brown mustard

 

½ cup ketchup

2 garlic cloves, smashed

 

1 tsp cayenne pepper

 

½ tsp freshly ground black pepper

 

Hamburger buns and coleslaw for serving

 

Instructions:

Prepare the Pork: Mix paprika, garlic powder, brown sugar, dry mustard, and sea salt in a bowl. Rub this spice blend all over the pork shoulder. Cover and refrigerate for at least 1 hour or overnight for maximum flavor.

 

Slow Roast: Preheat your oven to 300°F (150°C). Place the pork in a roasting pan and cook for about 6 hours, or until the meat is tender and falling apart. An instant-read thermometer should register 170°F (77°C) at the thickest part.

 

Make the BBQ Sauce: While the pork is roasting, combine cider vinegar, mustard, ketchup, brown sugar, garlic, cayenne, and black pepper in a saucepan. Simmer over medium heat for 10 minutes, stirring occasionally.
