Shrimp baked potato recipe

 


Your baked potato's don't have to be with just butter and sour cream. How about some shrimp? You heard right, shrimp. Get creative like I did and try these baked potato's, it’s a meal all by itself, that is truly filling and satisfying.

 

Start with six large Idaho Potato's.

 

Vegetable oil, for coating

1 stick (1/2 cup) butter, at room temperature

1 cup sour cream

Salt and ground black pepper

1 pound sautéed shrimp, peeled

8 ounces grated Cheddar, plus more for sprinkling

Paprika, for sprinkling

 

Pre-heat your oven to 350 degrees F. Cover with aluminum foil a baking sheet or pan.

 

Start by washing the potatoes, drying them and carefully poking them with a fork on the sides. Cover each potato with vegetable oil, put on the prepared baking sheet and cook for around 1 hour.

 

Take the potatoes from the oven and cut off the top third of each potato. Sauté the potato gently and place it in a large bowl. Place the butter in a bowl. Mix together on  high with a hand mixer, then apply the sour cream and salt and pepper to satisfy.

 

Chop the shrimp into big bits. Layer the shrimp and the cheese into the mixture. Kindly stuff the combination back into the potato shells, making sure you don't crack it. Pile the mixture to the top of the potato shells as far as you can. Sprinkle each potato with more cheese and some paprika.

 

Bake in the oven until browned, for 20 to 25 minutes.
