Crab Cakes are Traditional
recipes that mix crab meat with ingredients such as eggs, mayonnaise, bread
crumbs and other seasonings. Crab Cakes are thought to have been introduced to Maryland and the other
American colonies of English settlers. Most crabs that have been collected to
produce Crab Cakes remain in the seas of the Chesapeake Bay district of
Maryland.
Crab Cakes may be sautéed,
baked or grilled. Crab Cakes are sometimes eaten as a sandwich on a bun,
although smaller versions may be used as a hors d'oeuvre or as an appetizer.
The gourmet variant of the Crab Cake contains less filling and is composed with
more lump crab meat. Crab cakes made of blue crab, native to the Chesapeake Bay
region, are historically considered to be the finest in consistency and taste.
Maryland Crab Cakes are often eaten with sauces such as tartar sauce, mustard
or remoulade.
