Today, my meals were so delicious, because of the products I received. The company is Dafni Greek Products, from Maine.

The products from Dafni Greek, are imported from Greece, and hand crafted in Maine. They are high quality products, with fresh ingredients that our fantastic. Not only can you buy their products, you can see the company at festivals. Dafni Greek Products, may have started as a small business, but with divine products as these, they will grow large, very fast.

I started my day with a nice Greek salad for lunch, with Dafni Greek Products, kalamata olives, as one of my main ingredients. Kalamata olives are one of my all time favorite, I eat them several times a week, so I was very excited to taste them from Dafni. Dafni Kalamata olives are grown in a small region, of the southern Peloponnese Penisula. I must tell you, the taste of these Kalamata olives are like no other I have ever tasted. They have a very full bodied flavor, that is so fresh. The brine that the kalamata olives are in, is so extraordinary, you just want to drink it like a fine wine. The gluten free brine recipe is just so flavorful. The olive oil in the brine is very delicate, and flavorful. The ingredients include, water, apple cider vinegar, Pacific Sea Salt, and DÁFNI Extra Virgin Olive Oil. The mixture holds up to giving the Dafni Greek kalamata their unique flavor profile. The brine can be saved to use as a dipping sauce, or in a recipe, such as a pasta dish, or seafood dish. After you taste it you will not waste it, that's for sure. The kalamata olive itself, is so heavenly. It has a wonderful texture, and bite. The color of the kalamata olive is a nice dark color, and the flavor so fruity. You will want to create so many dish's with them. They are not only great in a salad, but would compliment a cheese board or pasta dish. Also they make a wonderful little snack. Another great idea to use them would be in a tapenade, the ideas are endless. The Dafni Greek kalamata olives are high in iron, and calcium, and so many other nutritious values. You will really enjoy them, and want to make them a staple in your kitchen.

I was so excited for dinner, and ready to taste the other products sent by Dafni Greek products.

For appetizers, I made two. The first I took a block of Greek feta cheese and drizzled it with Dafni Greek product, Greek Lemoni. It could not have been more elegant. Slicing off some of the feta with the lemoni was just divine and so classy looking. Dafni Greek Lemoni is considered a Greek drizzling oil, and is very, very elegant in look and flavor. Not only can you use it to drizzle onto a food, but you can use it as a marinade. It is a wonderful alternative to mayo also, and great if making a tuna salad. Also it is a extraordinary flavor enhancement, for drizzling over seafood, even pasta. The ingredients are organic and natural and consist of, DÁFNI Unfiltered Extra Virgin Olive Oil, Organic Lemon Juice, DÁFNI Wild Greek Oregano, Sea Salt from the Pacific. The anacidity level of the Dafni Greek Lemoni, is very low, and there is no over salty taste to it. A beautiful blend! The olives that make this Lemoni are handpicked, and harvested from a family grove in Gythio Greece, and is never mixed with other oils. The world wide olive that is used is the Koroeiki olive. If you are looking to transform a dish into a five star meal, this Dafni Greek Lemoni, is a wonderful choice.

The second elegant appetizer for tonight's dinner, was fun to create. I made everyone a green olive feta shooter, using Dafni Greek Products, green olives. The olives came as a gift sampler, so well packaged and ready for gift giving. The green olives in the jar are called green atlas olives. They are in a wonderful tasting brine of fresh lemon juice, Dafni extra virgin olive oil, and pacific sea salt as well. The olives are very fresh, and large in size. They are plump and buttery tasting, a very gourmet flavor profile. The bite of the olives is a nice crisp, and also when you open the jar there is a aromatic scent that just draws you in for a bite. Not only did the Atlas olives dress up my shooters, they added the perfect taste.

The next dish before the main course, was a nice feta watermelon salad, using Dafni Balsamic vinegar. Talk about a balsamic vinegar, this one from Dafni, is aged in a oak wood barrel for a minimum of 12 years. The flavor is just nectar to your lips. Its, smooth, sweet, and has woody tones. The blend is not to thin and not to thick. And the aged balsamic is made in Modena, Italy, from selected cooked grapes, and blended with fermented one hundred percent Italian red wine vinegar. A true gourmet balsamic! It parried so well with not only the feta cheese, but the watermelon as well. In every bite you taste the care and the love that went into the process. The color is so beautiful, a gorgeous deep brown, that is smooth and like velvet. When you open the bottle the aromatics just flow out. This Dafniaged balsamic vinegar is very versatile, and would be a wonderful drizzle over any cheese, or fruit, but also a wonderful dressing for a salad. And you can also add it to your marinades, or as a added ingredient to a recipe you may have, to spruce it up. How every you decide to use it, the finish product will be very sophisticated.

My main dish was some baked fish, drizzle with Dafni unfiltered extra virgin olive oil. The aroma that escapes when you open the bottle is just amazing. And the taste even more so. You get the ingredients of green and ripe olive fruits in the flavor profile. Then there is a nutty, and buttery taste as well, with a slight hint of artichoke. A very classy olive oil from Dafni Greek Products. The after taste is smooth and very pleasant on the palate, then a nice peppery finish. It is a wonderful gourmet drizzle, but again is very versatile. Use it for a bread dipping sauce, a salad dressing, a coating for some pasta, the ideas again are endless. The Dafni olive oil is just divine, and made with such love and quality. And you taste it in every bite. It just complimented the top of my baked fish so well, adding just the right flavor. You will for sure, want to make Dafni unfiltered extra virgin olive oil a staple in your kitchen. I have no doubts!
