Mild
Pasta with Zucchini and Cheery Tomatoes works well as a side dish or as a
complete dinner menu item. It's light and filled with vegetables.
Ingredients

Zucchini Slice
1/2
Cup Diced Onion
8
oz Container Cherry Tomatoes Sliced
6
Strips Bacon
1/2
Cup Romano Cheese Grated
1
Tbs Fresh Thyme
3
Tb Butter
8
oz Spaghetti Pasta
3
Cup Broth or Water
1/2
Cup Evaporated Milk
Instructions
Set
the Instant Pot to "Saturday" and wait until the display reads "
Wash
and cut or dice Tomatoes, Zucchini, and Onion
Permit
the butter to melt in the Instant Pot.
Permit
the onions to sauté for 3 minutes.
Cook
for another 2 minutes after adding the zucchini to the onions.
Permit
chopped bacon and fresh thyme to simmer for 1 minute with the onions and
zucchini.
Cook
for 1 minute after adding the sliced Cherry Tomatoes.
Set
aside the vegetable mixture from the Instant Pot.
If
necessary, add Broth or Water to deglaze the bottom of the saucepan.
Pasta
should be included.
Cook
on Manual High Pressure for 4 minutes, followed by a 4 minute Natural Release.
Stir
with the lid open. Stir in the evaporated milk and shredded cheese.
Toss
in the sautéed veggies and give them a quick toss. Close the cover of the
Instant Pot for 2 minutes to enable the vegetables to warm up again.
Use
as a side dish or as a main meal.
