Labor Day Picnic

  



Introduction

 

Labor Day is a time to celebrate the American worker. It's also a great time to relax and enjoy some delicious food with friends and family. Here is a recipe for a delicious and easy-to-make picnic spread that is perfect for Labor Day.

 

Ingredients

 

1 watermelon, seeded and cut into wedges

1 pound boneless, skinless chicken breasts

1/2 cup barbecue sauce

1/4 cup brown sugar

1/4 cup apple cider vinegar

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1 pound potatoes, scrubbed and cut into 1-inch cubes

1/2 cup chopped onion

1/4 cup chopped green bell pepper

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup chopped fresh parsley

Instructions

 

Preheat the grill to medium-high heat.

In a large bowl, combine the watermelon wedges, chicken breasts, barbecue sauce, brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, salt, and pepper.

Toss to coat the chicken breasts evenly.

Grill the chicken breasts for 10-12 minutes per side, or until cooked through.

In a large bowl, combine the potatoes, onion, green bell pepper, olive oil, salt, and pepper.

Toss to coat the potatoes evenly.

Grill the potatoes for 15-20 minutes, or until tender.

To serve, arrange the watermelon wedges, chicken breasts, potatoes, and parsley on a platter.

Tips

 

For a vegetarian option, you can omit the chicken breasts.

You can also add other vegetables to the potato salad, such as carrots, corn, or peas.

This picnic spread is perfect for a potluck or picnic.
