Instructions
Preheat the grill to medium-high heat.
In a large bowl, combine the watermelon wedges, chicken
breasts, barbecue sauce, brown sugar, apple cider vinegar, Worcestershire
sauce, garlic powder, onion powder, salt, and pepper.
Toss to coat the chicken breasts evenly.
Grill the chicken breasts for 10-12 minutes per side, or
until cooked through.
In a large bowl, combine the potatoes, onion, green bell
pepper, olive oil, salt, and pepper.
Toss to coat the potatoes evenly.
Grill the potatoes for 15-20 minutes, or until tender.
To serve, arrange the watermelon wedges, chicken breasts,
potatoes, and parsley on a platter.
Tips
For a vegetarian option, you can omit the chicken breasts.
You can also add other vegetables to the potato salad, such
as carrots, corn, or peas.
