Ingredients:

crust:

Instructions:
Make the
crust: In a large bowl, whisk together the flour and salt. Cut in the butter
using a pastry blender or two knives until the mixture resembles coarse crumbs.
Add the ice water a tablespoon at a time, mixing until the dough just comes
together. Divide the dough in half, wrap it in plastic wrap, and refrigerate
for at least 30 minutes.
Make the
filling: In a large bowl, combine the apples, granulated sugar, brown sugar,
flour, cinnamon, nutmeg, salt, and lemon juice. Toss to coat the apples evenly.
Assemble the
pie: Preheat the oven to 425°F (220°C). Roll out one-half of the dough on a
lightly floured surface to a 12-inch circle. Place the dough in a 9-inch pie
dish and trim the edges. Pour the apple filling into the prepared crust.
Roll out the
top crust: Roll out the remaining dough to a 12-inch circle and cut into strips
for a lattice top. Weave the strips over the apple filling.
Bake the
pie: Brush the top crust with milk and sprinkle with the topping mixture. Bake
for 15 minutes at 425°F, then reduce the temperature to 375°F (190°C) and bake
for an additional 35-40 minutes, or until the crust is golden brown and the
filling is bubbly.
