Cornish Hen Recipe

  



Cornish hens are small, tender birds that is perfect for roasting. They are a great alternative to chicken, and they are also very affordable.

 

Ingredients:

 

1 Cornish hen

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup chopped onion

1/4 cup chopped celery

1/4 cup chopped carrot

1/4 cup white wine

1/4 cup chicken broth

1 tablespoon flour

1/2 teaspoon dried thyme

Instructions:

 

Preheat the oven to 375 degrees F (190 degrees C).

Rinse the Cornish hen and pat it dry with paper towels.

Rub the olive oil, salt, and pepper all over the Cornish hen.

Stuff the Cornish hen with the onion, celery, and carrot.

Place the Cornish hen in a roasting pan.

Pour the white wine and chicken broth into the roasting pan.

Roast the Cornish hen for 45-50 minutes, or until the internal temperature reaches 165 degrees F (75 degrees C).

Remove the Cornish hen from the roasting pan and let it rest for 10 minutes.

In a small bowl, whisk together the flour and thyme.

Add the flour mixture to the roasting pan and cook over medium heat for 1 minute, or until the flour is browned.

Add the white wine and chicken broth to the roasting pan and bring to a boil.

Reduce the heat to low and simmer for 5 minutes, or until the sauce has thickened.

Serve the Cornish hen with the sauce.

Tips:

 

You can also roast the Cornish hen in a cast iron skillet.

For a more flavorful Cornish hen, you can stuff it with your favorite herbs and spices.

You can also serve the Cornish hen with a side of mashed potatoes or rice.
