Seafood Stuffed Potatoes

 



 Cook time: 1 hour

 

Ingredients:

 

4 large russet potatoes

1 tablespoon olive oil

1 pound cooked seafood (shrimp, scallops, cod, or a combination)

1/2 cup chopped onion

1/4 cup chopped celery

1/4 cup chopped bell pepper

1/4 cup chopped parsley

1/4 cup mayonnaise

1/4 cup sour cream

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Instructions:

 

Preheat the oven to 400 degrees F (200 degrees C).

Wash and scrub the potatoes. Prick the potatoes with a fork several times. Microwave potatoes on high for 10-12 minutes or until tender.

While the potatoes are cooking, heat olive oil in a large skillet over medium heat. Add onion, celery, and bell pepper and cook until softened, about 5 minutes.

Add cooked seafood, parsley, mayonnaise, sour cream, salt, pepper, paprika, garlic powder, and onion powder to the skillet. Cook and stir until heated through, about 5 minutes.

Cut a slit lengthwise in each potato. Scoop out some of the potato flesh, leaving a shell.
