My, Spaghetti noodles are drenched in a creamy
tomato sauce laced with garlic, onion, and a dash of spice, then tossed with
juicy delicious shrimp. This quick and easy weekday supper is so tasty and
luxurious that it will quickly become a family favorite!
INGREDIENTS:
1/2 lb large shrimp deveined and
peeled
7 oz spaghetti or your choice of
pasta
1 tbsp olive oil
4 garlic cloves thinly sliced
1-2 dried red chilies crushed in
quarters lengthwise
1/2 medium-sized yellow onion
sliced
1 medium-sized tomato diced
1/2 cup tomato sauce
1 cup heavy cream or evaporated
milk
2 tbsp mozzarella/parmesan cheese
grated
salt and pepper to taste
chopped parsley for garnish
Season the shrimp to taste with
salt and pepper. Place aside.
Cook the pasta for about 1 minute
shorter than the suggested time in a big pot of boiling salted water. Set aside
after draining. To prevent sticking, stir the noodles in roughly 1 tbsp olive
oil before cooking.
In a skillet over medium heat,
heat the olive oil. Cook until the garlic and red chilies are aromatic. Cook,
turning periodically, until the shrimp turn pink in color, then add the onion
and tomato.
Bring the tomato sauce and heavy
cream to a boil. Season to taste with salt and pepper, then toss in the pasta
and cheese. Combine all of the ingredients and garnish with parsley. Have fun!
