Stuffed Zucchini Boats




If you're searching for a no-fuss, healthful side dish to pair with your favorite Italian-inspired dinners, this is it. Begin by preheating the oven to 350°F and slicing four zucchinis in half lengthwise. Then, using a spoon, scrape out the seeds and spray both sides of the zucchini with extra virgin olive oil. Place on a baking sheet lined with foil and top with tomato sauce, diced tomato, grated Parmesan cheese, rosemary, thyme, salt and pepper to taste. Bake for 15 minutes, then broil for 3 minutes more, or until the cheese is slightly browned.
