With this
Instant Pot chipotle chicken tacos recipe, you can amp up your Taco Tuesday, or
any day! This dish has tons of flavor and would make an excellent
taco filling. On Weight Watchers, this recipe is only 4 Blue plan points
per serving.

With the
lid off the cooker, spritz the olive oil spray and heat to "Saute"
until the cooker has heated up. Cook until the onion is transparent and the
garlic is aromatic, about 5 minutes.
Season
the chicken breasts with salt and pepper before placing them in the Instant Pot
and browning them. Combine the chicken stock, chiles, brown sugar, cilantro,
and lime juice in a mixing bowl. Set the pressure cooker to "Manual"
and securely lock the lid. Cook for 8 minutes on HIGH pressure.
To
relieve the pressure, do a rapid release. Remove the chicken breasts by opening
the cover. Return the chicken to the cooker after shredding it.
Scoop out
1/2 cup of the chicken mixture and place it on a tortilla. Serve immediately
with lettuce, tomato, and cheese, if preferred.
