This dish also has only a
few ingredients, some of which you may not think work well together, but the
delicacy of the scallops is the perfect protein to match with the complex
flavor of the teriyaki, and let's be honest, what doesn't taste amazing wrapped
in bacon? A excellent appetizer for gatherings, or a fantastic main course for
dinner when combined with a zesty salad.
YOU WILL Want
8 big sea scallops
14 cup teriyaki sauce
4–8 bacon strips
Mix the scallops with
enough teriyaki marinade to coat and refrigerate for 30 minutes.
Preheat the oven to
broil. Wrap each scallop with just enough bacon to completely encircle it
without overlapping (it's preferable to stretch the bacon pretty thin—it crisps
up better that way).
To secure the bacon and
scallop, insert a toothpick. Brush with extra teriyaki sauce and set in the
oven 6" below the broiler.
Cook for 10 to 12
minutes, or until the scallops are firm and the bacon is cooked through.
