Strawberry Oatmeal Breakfast Smoothie

 


A quick vegan smoothie with a thick, creamy texture and a deep pink hue. Extremely filling, and ideal for those in a hurry in the morning.

 

1 cup soy milk

½ cup rolled oats

1 banana, broken into chunks

14 frozen strawberries

½ teaspoon vanilla extract

1 ½ teaspoon white sugar

 

Blend together the soy milk, oats, banana, and strawberries in a blender. If desired, add vanilla and sugar. Mix until completely smooth. Pour into serving glasses and serve.

Today I received some really unique confections from the company Living Ratio, formally known as, Phi Kind.




Jonathan is the founder of these organic and vegan-friendly chocolates, and cacao calm a superfood chocolate blend. The process of making these organic confections is using the best ingredients that the world has to offer.






Living Ratio offers sweet confections that every walk of life can enjoy. Also, Living Ratio supports others, as well as farmers and chocolate makers.  Designers are concerned about the environmental effect, therefore only use recyclable transportation materials and insulation that also protects your chocolate from our production to your house.




 

Living Ratio is all about organic, sugar-free chocolate bars, chips, and hand-decorated truffles. Cacao from a single origin, fairly traded, and stone-ground in their commercial kitchen in Northern California.





The first product the family and I tried, was Living Ratio, Cacao Calm. A superfood chocolate blend, that is fair trade. It is Cacao plus Adaptogens. Cacao Calm is a beneficial drink combination infused with illuminating herbs and adaptogens that are intended to reduce stress and promote overall wellness. Every serving dissolves easily in any drink and is packed with plant-based nutrients to improve mood and boost long-lasting, focused energy with no fillers and no collapse. One spoonful allows you to transform your daily routine into an amazing difference. This yummy Cacao drink is not only organic but kosher. It's easy to mix into milk, almond milk, coffee, even water. INGREDIENTS:

½ cup extra virgin coconut oil melted and cooled

¾ cup coconut sugar

½ cup Living Ratio Cacao Calm blend

2 tablespoons maca powder optional

½ teaspoon Himalayan salt

1 teaspoon vanilla extract

3 large eggs

½ cup whole grain flour

½ cup walnuts chopped

 

INSTRUCTIONS

Preheat the oven to 350°F with an oven rack in the bottom third.

Using parchment paper, line the bottom of an 8-inch square baking pan. Place aside.

Allow the coconut oil to cool to room temperature.

Combine cooled coconut oil, coconut sugar, sifted cocoa blend, and maca powder in a medium-sized mixing bowl. Stir in the salt well. Don't worry if it seems crumbly; it will smooth out after the eggs and flour are added. With a spatula, fold in the vanilla extract. Then, one at a time, add the eggs, stirring firmly after each one.

Whenever the batter seems thick and thoroughly incorporated, whisk in the flour until completely combined.

Mix in the chopped walnuts and spread the batter evenly on a baking sheet lined with parchment paper.

20–23 minutes in the oven (or until a toothpick inserted into the center come out almost clean). Keep an eye on the brownies and don't overbake them.

Remove from the oven and set aside to cool fully.

Melted dark chocolate can be sprinkled on top.




Now the family and I get to taste some really amazing truffles, send over also from, Living Ratio.

Baked Chicken Shawarma

 


To make intensely flavored cuisine, Middle Eastern dishes rely on a variety of spices and condiments. Shawarma is often made with a stack of meat on a grill, but this recipe asks for a layer of chicken thighs baked on a sheet pan in the oven. To get extra flavor from the light char, use the broiler momentarily after the baking time. Chicken may be served over cooked white rice, or it can be cut and placed in a pita or flatbread with tomatoes, lettuce, and your favorite tzatziki or tahini sauce.

 

⅔ cup extra-virgin olive oil

2 medium lemons, juiced

1 tablespoon lemon zest

4 tablespoons finely minced fresh garlic

4 teaspoons smoked paprika

4 teaspoons ground cumin

2 teaspoons ground coriander

2 teaspoons crushed red pepper flakes, or to taste

2 teaspoons salt, or to taste

1 teaspoon ground black pepper, or to taste

1 teaspoon ground turmeric

1 teaspoon ground cinnamon

3 pounds boneless, skinless chicken thighs

1 large onion, sliced 1/2-inch thick

2 tablespoons chopped fresh parsley

 

In a gallon-sized resealable plastic bag, combine olive oil, lemon juice and zest, garlic, smoked paprika, ground cumin, ground coriander, crushed red pepper flakes, salt, pepper, turmeric, and cinnamon. Close the bag and gently press the contents together until thoroughly combined. Put the chicken thighs into the bag, squeeze out most of the air, seal, and place in the refrigerator for at least 2 hours, but up to 8 hours.

Heat the oven to 425° F. Oil a 12x18-inch baking sheet lightly. On the bottom, layer onion slices; on top, layer chicken thighs.

 

Cook for 30 minutes on the center rack of a preheated oven. Turn on the broiler and bring the rack closer to it. Broil the chicken for 2 to 3 minutes, or until a light char forms. In the middle, an instant-read thermometer should read at least 165 degrees, F. Sprinkle, with parsley if desired.

Pommes Anna with Gruyere

 

This French side dish is made up of layers of thinly sliced Yukon Gold potatoes layered with Gruyere cheese and golden sautéed onions.

 

Ingredient Checklist

 


¾ teaspoon salt

½ teaspoon ground black pepper

½ teaspoon thyme

2 tablespoons butter, divided

1 thinly sliced sweet onion

1 ½ pounds Yukon gold potatoes, peeled and thinly sliced

1 cup shredded Gruyere cheese

 

In a mixing dish, combine the salt, pepper, and thyme.

In a 10-inch skillet over medium heat, melt 1 tablespoon butter. Continue cooking onions for 8 minutes, or until tender and golden brown. Transfer to a bowl.

Take the pan from the heat after melting the remaining 1 tablespoon butter.

Arrange 1/3 of the potato pieces in a slightly overlapping layer in the skillet. Mix in 1/2 teaspoon of the salt mixture. Half of the onions and half of the Gruyere cheese should be on top. Repeat the layers, finishing with the potatoes; sprinkle with the remaining salt mixture.

Cook, covered, over medium-low heat for 30 minutes, or until potatoes are cooked, lowering the heat to low if required. Uncover and cook for another 5 minutes. Run a spatula around the sides to release; set aside to cool for 5 to 10 minutes. Carefully invert the potatoes onto a serving platter.

Shawarma Seasoning

 


Make your own Middle Eastern shawarma traditional seasoning. This variant has a milder clove taste.

 

Ingredients

 

2 tablespoons garlic powder

2 tablespoons ground black pepper

2 tablespoons ground allspice

1 tablespoon ground nutmeg

1 tablespoon ground cinnamon

1 tablespoon ground cardamom

½ tablespoon chili powder

½ tablespoon dried oregano

½ tablespoon salt

2 teaspoons ground cloves

 

In a mixing bowl, combine garlic powder, black pepper, allspice, nutmeg, cinnamon, cardamom, chili powder, oregano, salt, and cloves.

Taco Seasoning

 


Use as little or as much as you wish, depending on how spicy you and your family prefer their food.

 

Ingredients

 

1 tablespoon chili powder

¼ teaspoon garlic powder

¼ teaspoon onion powder

¼ teaspoon crushed red pepper flakes

¼ teaspoon dried oregano

½ teaspoon paprika

1 ½ teaspoon ground cumin

1 teaspoon sea salt

1 teaspoon black pepper

 

Combine chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt, and pepper in a small mixing bowl. Keep it in an airtight container.

Lemon Chess Pie

 

A yummy pie for, to end your evening, or take for a special occasion.

 


What you need

 

1 (9 inch) pie shell

2 cups white sugar

½ cup butter softened

5 eggs, beaten

1 cup milk

1 tablespoon all-purpose flour

1 tablespoon cornmeal

¼ cup fresh lemon juice

3 ta Heat the oven to 350°F

 

Cream together sugar and butter or margarine in a large mixing basin until light and creamy. Incorporate the eggs and milk. Combine the flour, cornmeal, lemon juice, and lemon rind in a mixing bowl. Blend until smooth. Pour the sauce into the pastry shell.

Cook in a preheated oven for 35 to 40 minutes, or until the middle is set. Top lemon zest

Bacon Wrapped Asparagus

 


 Easy side dish for your dinners, lunch, and more!

 

1 bunch asparagus

10 - 15 strips bacon

2 Tbsp brown sugar

a pinch of black pepper

 

Heat the oven to 425°F.

Bacon slices wrapped around asparagus (2 - 3 spears of asparagus to 1 strip of bacon). Place on a baking sheet lined with parchment paper or foil.

On top of the bacon, sprinkle with brown sugar and black pepper.

Cook for around 18 to 22 minutes. At the 18-minute point, keep an eye on the bacon to make sure it doesn't burn.

Cottage Cheese Alfredo

 


This low-fat, low-calorie cottage cheese alfredo is a lighter version of the rich and creamy pasta classic!

 

Ingredients

1 cup milk use skim for low-fat

½ cup cottage cheese use low-fat cottage cheese to make this recipe low-fat

1 tablespoon cornstarch

¼ teaspoon salt

⅛ teaspoon pepper

¼ teaspoon garlic powder or more to taste

½ cup grated Parmesan cheese or Romano cheese

dried basil to taste

dried oregano to taste

fresh chopped parsley for garnish, optional

cooked pasta of choice

 

Blend all of the ingredients, except the basil, in a food processor or blender until smooth. In a small saucepan, combine the mixture with the basil and oregano. Cook over medium-low heat until well cooked and smooth. To taste, add additional basil, oregano, salt, pepper, or other seasonings. Allow it to simmer for about 5 minutes over low heat, stirring regularly. Just before serving, add the cooked pasta and let it soak in for a few minutes. As desired, top with meat or vegetables; optionally, sprinkle with fresh chopped parsley. Serve right away.

AIR FRYER HAMBURGER

 


 Air fryer hamburgers are very easy to cook and leave no mess!

 

INGREDIENTS

1 lb hamburger

1 packet Lipton Onion soup mix

Burger fixings: buns, pickles, lettuce, mayo, cheese, ketchup

 

Combine the hamburger and onion soup mix in a mixing basin.

1 pound ground beef, 1 packet Lipton Onion Soup Mix

Make hamburger patties in the size you choose.

If you prefer your burgers medium, air-fried them at 375°F for 12 minutes for 1/2-pound patties or 8 minutes for 1/4-pound patties, rotating halfway through. If you're not sure if the burgers are done, use a meat thermometer and cook until done to your liking.

Two Chicks Beef Jerky

 


From Two Chicks Jerky, I got to do a review. The company has an amazing back story that I hope you all will read. Not only do they make amazing jerky, but give back with Looking out Foundation.




This is a wonderful women-owned company, located out of Petaluma, CA.  From a humble start to our kitchens today, Two Chicks Jerky is making its mark on the jerky business.




Shannon and Breelyn, are on their way, and if you would like to see their product closer to you, send them a request. I know after the first bite you will want more of their amazing jerky.




 

The first bag from, Two Hot Chicks beef jerky is their Habanero. Nice heated beef jerky made with one hundred percent grass-fed beef. What brings the flavor is those California chili peppers. I even sliced some up and incorporated them into a skillet cornbread.




 Ingredients

1 1/4 Cup Organic Cornmeal

3/4 Cup Flour

1 Tablespoon + 1 teaspoon Baking Powder

3/4 teaspoon Sea Salt

1/4 Cup Whole Cane Sugar

2 Eggs, beaten

1 1/2 Cup Buttermilk

1/4 Cup Lard, or other cooking oil

1/4 cup two chicks habanero beef jerky

 

Begin by larding a cast-iron pan.

Preheat the oven to 425°F and place the larded skillet inside.

In a mixing dish, combine cornmeal, flour, baking powder, sea salt, two chicks habanero jerky, and sugar. All of that awesomeness should be combined. In a separate small dish, whisk together the eggs and buttermilk. Fill a well in your dry ingredients with the egg/buttermilk combination. Quickly combine all of the ingredients. Only until fully assimilated. Make sure not to over-mix. It doesn't matter whether it's bumpy. Pour the batter into the hot pan you just removed from the oven. Cook for 18-22 minutes, or until the top is gently browned and peeling away from the pan edge. Slather with a generous amount of butter and enjoy.




Two Chicks Jerky habanero is a great on-the-go snack, or an added ingredient to add a unique taste to your recipe. If you like a little spice in your life, Two Chicks habanero beef jerky will do the trick.




The next bag of Two Chicks beef jerky was their one hundred percent grass-fed beef classic. This is a nice textured jerky just like the habanero. It doesn't break your teeth trying to enjoy it. It’s a nice refined beef jerky that is just right, not too sweet, and not too spicy. It has a nice garlic-lime flavor to it, with a hint of black pepper. It's really enjoyable, especially with a nice cold brew.

Boss Brew Coffee Review

 


From Boss Brew Coffee, I received two bags of coffee. One standard, one flavored. Inside each was a variety of their coffee's, which I incorporated into my entire day.




From sipping the coffee in a variety of ways to adding some into some yummy recipes, it was just a fun-filled coffee day, with Boss Brew Coffee.





For breakfast, it was a pot of coffee from the standard bag, Colombia roast. This medium roast coffee has the most wonderful aroma. And the taste is just as delicious. The region the coffee comes from is, Medellin, Antioquia Colombia. The profile is of dried orange, berry, and chocolate. A wonderful way to start the day.





To go with breakfast I made some cinnamon hazelnut coffee muffins using some of the coffee from the flavored bag. This medium roast coffee made my muffins full of flavor and so moist. It has the perfect combo of cinnamon and hazelnut, a nice smooth taste even in a recipe.





While waiting for my lunch to be ready I had a cup of Tanzania coffee out of the standard bag. A lovely floral aroma brewing in the kitchen. The taste of pear, floral, jasmine, and strawberry is the flavor of your taste buds. This coffee comes from, Mbeya region of Tanzania. It is a medium-light coffee, that really relaxes you when sipping away.





With some of the coffee called Brazil Santos, I made a marinade for my chicken wings. This is a smooth coffee that has hints of cocoa and gave my wings a delicious flavor. It comes from, Parana and Sao Paulo, Brazil, and is a medium roast coffee. As a marinade, it really brought extra flavor down to the bone of the chicken.





From the flavored bag, there was some caramel coffee, so I decided to make a nice smoothie using it, and enjoying it with my lunch. It is a medium smooth coffee, that really has the fantastic taste of caramel.





While preparing dinner I had a cup of Ethiopian coffee out of the standard bag. A nice cup of coffee that is medium-light with a taste of milk chocolate and caramel. It comes from the Sidama Zone of Ethiopia. It is aromatic and very enjoyable on the palate.





For dinner, I made lamb chops in my instant pot using Honduras coffee from the standard bag. Coffee is so wonderful to cook with and to bake with. This medium-dark coffee gives you a nice caramel, spice flavor profile. And when cooking with it, lends so much flavor to your recipe. It comes from, Marcala, La Paz, Honduras.




 

Ingredients

1 pound 8-10 Lamb Chops

2 cups Brown Sugar

2 Tbsp. Ground Ginger

1 Tbsp. minced garlic

1 cup Soy Sauce

2 Tbsp. Sambal Chili Garlic Paste

2 Tbsp. Olive Oil

½ cup Boss Brew Honduras coffee

Sesame seeds for garnish

 

In a mixing bowl, combine brown sugar, ground ginger, garlic, soy sauce, and sambal paste.

Pour half of the marinade over the lamb chops in a resealable plastic bag.

Keep the remainder for later.

Ingredients should be sealed and massaged together.

Marinate in the fridge for 4 to 24 hours.

Set the Instant Pot to Saute, add 1 12 tbs olive oil, and wait for it to heat up before adding the marinated lamb.

Caramelize for about 2 minutes on one side, then turn and cook for another 2 minutes.

In the Instant Pot, combine the remaining sauce and 12 cups of coffee.

Set the timer for 2 minutes on High Pressure for medium.

Allow for a 15-minute natural release.

Remove the meat and set it aside to rest.

As required, coat with sauce.

Cook for about 5 minutes, or until the sauce thickens.

Serve





To enjoy with dinner I made a nice cold brew coffee with a blend of Costa Rica. Each sip you taste sweet apple, raisin, and honey. It makes the perfect cold brew coffee. It comes from, alajuela Costa Rica.





I did some small desserts with the other coffee blends. The first is some coffee cake bars with the flavor Cinnabun from the flavored bag. It’s a nice treat at the end of the evening. This coffee really added extra flavor to my coffee cake bars. It gives you the flavor profile of cinnamon rolls straight out of the oven. It is a smooth medium coffee that you will truly enjoy.





Next up with hazelnut coffee I made some cookie dough bites. They were so amazing, and we all enjoyed them. The nutty flavor of the coffee really brought the flavor to my cookie dough bites. This is a wonderful Brazilian coffee you can enjoy baking with and sip.





The next mini dessert was some tiramisu made with the mocha coffee from the flavored bag. This naturally flavored coffee is amazing, even in a dessert. It has a nice rich chocolate flavor that is delicate to the taste buds. It is a wonderful flavored coffee, nice and smooth.





The last mini dessert was a trifle, made with French vanilla coffee. A wonderful end to the evening, with Boss Brew Coffee. The coffee is rich and tastes like creamy vanilla. It brought such a delicate flavor to my last dessert. It's smooth and the aroma is so amazing.
