Recipe for Vegetable Tortellini Soup. This

Ingredients

tablespoon olive oil
½
medium onion diced
2
cloves garlic minced
2
cups carrots, sliced
1
pound peeled and diced whole tomatoes in the can
4
cups vegetable broth
1
1/2 teaspoons Italian Seasoning Mix
1
medium zucchini chopped
1
(9-ounce) package refrigerated cheese tortellini
2
cups chopped fresh spinach or 1 package frozen and thawed spinach
grated
Parmesan cheese for serving
In
a Dutch oven over medium heat, combine the olive oil, onions, garlic, and
carrots. Cook for 3 minutes, or until the vegetables are just soft. Combine the
tomatoes, vegetable broth, and Italian Seasoning Mix in a mixing bowl.
Cook
until the tortellini is cooked thoroughly, about 5 to 7 minutes, after adding
the zucchini (if using). Take the pan off the heat and add the spinach. Allow
the spinach to soften due to the heat of the broth. Seasonings can be added to
taste.
If
using, serve warm with grated Parmesan cheese.
