Delicious Southern Smothered
Chicken is created with perfectly browned chicken with just an onion and garlic
sauce that's excellent over your starch of preference. This one is pure
southern hospitality.
1 lbs chicken legs, and
thighs
1 1/2 cup all-purpose flour
1 tsp salt
1 tsp ground black pepper
1 tsp celery seed
1 tbsp onion powder
1 tsp poultry seasoning
1 tbsp garlic powder
1 tsp smoked paprika
1/4 cup vegetable oil
2 cups chicken broth
1 cup whole milk
2 tsp minced garlic
1 medium-sized onion chopped
Begin by making sure that all
of the chicken is cleaned.
In a large mixing bowl,
combine 1 1/2 cups flour and the following flavorings, garlic powder,
onion powder, salt, pepper, celery seed, poultry seasoning, and smoky paprika.
Combine until everything is properly combined.
Cover the chicken with
seasoned flour, being particular to coat all sides.
Keep the seasoned flour aside.
Pour 1/4 cup vegetable oil into a wide pan and heat over medium heat. Begin
adding the chicken, being careful not to overcrowd the pan.
Sauté until the chicken is
golden brown.
Remove the chicken from the
pan once it has browned well. Continue to heat the oil in the pan. Toss in the
onions and simmer for 2 minutes before adding the garlic. Allow the garlic to
cook for an additional minute after adding it to the pan, then withdraw the
onions and garlic from the pan.
To the pan, add three
tablespoons of the seasoned flour. Combine with the oil.
Then add 2 cups of chicken
broth. While putting in the broth, whisk in the flour. Make certain there are
no lumps.
Allow the gravy to simmer for
about 2 minutes, then add 1 cup of milk to the pan. Allow the creamy gravy to
simmer for about 3 minutes before putting the chicken, onions, and garlic again
into the pan.
Ensure the chicken is well
covered in the cream gravy.
Position a cover on the pan
and cook the chicken for 30-35 minutes. Make sure to flip the chicken every now
and then.
When the chicken is done,
serve it over rice or mashed potatoes.
