A bacon-wrapped stuffed
chicken breast with roasting potatoes dish is a fast and easy supper that is
guaranteed to impress any audience! This chicken is filled with a delicious
mixture of three kinds of cheese, garlic, and herbs.
Cooking spray
4 boneless skinless chicken
breasts
2 ounces cream cheese softened
1/4 cup shredded cheddar
cheese
1/4 cup shredded mozzarella
cheese
2 teaspoons finely chopped
parsley
1/4 teaspoon garlic powder
salt and pepper to taste
8 slices bacon
1 pound small new potatoes
halved
Optional garnish: chopped
parsley
Oven to 450 degrees
Fahrenheit. Coat a baking pan with foil and cooking spray. To make a deep
pocket, cut a slit lengthwise across every chicken breast with a little knife.
Combine the cream cheese,
cheddar, mozzarella, parsley, and garlic powder in a mixing bowl. Season with
salt and pepper. Scoop the cheese mixture equally into each chicken chest
pocket. Sprinkle the top of each chicken breast with salt and pepper,
then weave two pieces of bacon around each. Arrange the chicken breasts on the
baking pan, followed by the potatoes. Sprinkle the potatoes with salt and
pepper after spraying them with cooking spray.
Preheat the oven to 400°F and
cook for 40 minutes. Broil for another 3-5 minutes, or until the bacon is
browned and crispy.
Serve warm, garnished with
chopped parsley.
