This
Pork Loin recipe is simple to prepare and stunning enough to serve to company.
If you are using a crockpot or an oven, this recipe will have you eating
the most amazing roast in no time!
INGREDIENTS
PORK
LOIN:
4-5
pound pork loin roast, trimmed of skin and fat
1
1/2 tablespoons olive oil, divided
RUB
2
teaspoons paprika
1
teaspoon brown sugar
1
teaspoon each garlic powder and onion powder
1/2-1
teaspoon red chili powder
2
teaspoons coarse salt
1/2
teaspoon black cracked pepper
HONEY
GARLIC BUTTER SAUCE
1/2
cup honey
1/2
cup unsalted butter
6
cloves garlic, finely chopped or minced
3
tablespoons low sodium soy sauce
2
tablespoons rice wine vinegar
pinch
of salt
1/2
teaspoon cracked black pepper
ADDITIONAL
1/2
cup low sodium, beef or chicken
1/2
cup water
4
teaspoons cornstarch
Directions
PORK
LOIN: Using a paper towel, pat dry the pork loin. 1 tablespoon oil should be
combined with the rub components. Rub the seasoning mixture into the pork.
In
a large pan or skillet, heat the remaining oil (approximately 2 tablespoons)
over medium heat. Caramelize the pork all over until golden brown, turning it
around to prevent the seasonings from scorching.
SAUCE:
Melt the butter in the same pan that the pork was cooked in, scraping out any
residual pieces. Sauté the garlic for 1 minute, or until aromatic. Stir in the
other sauce ingredients and bring to a boil for 1 minute.
OVEN
Heat
the oven to 350°.
In
a roasting pan, place the seasoned pork that has been browned.
Prepare
the sauce as directed. Maintain 1/2 cup sauce aside for mopping. Add the
remaining sauce over the meat. All around meat, add 1/2 cup stock and 1/2 cup water.
Cook
for twenty minutes, covered. Baste with half of the remaining sauce and
continue roasting for another fifteen minutes, uncovered.
Baste
once more and continue to roast for another 10-15 minutes, or until a meat
thermometer reads 145°F in the thickest section.
