Make
your French toast summer-ready with fresh berries, ricotta, honey, and mint.
Ingredients

large egg, beaten
one
cup milk
1
tsp vanilla extract
4
slices thick-cut white bread
2
tbsp butter
1/2
cup of ricotta
2
tbsp honey
10
strawberries some sliced, some halved
2
mint sprigs, leaves picked
Whisk
together the egg, milk, and vanilla in a large mixing bowl. Soak one side of
the bread slices in the liquid, then turn them over and soak for 1-2 minutes.
In a large nonstick skillet over medium heat, melt 1 tablespoon of the butter
and add two pieces of bread. Saute for 5 minutes, or until golden, then flip
and cook for another 5 minutes. Transfer to a platter and fry the remaining two
slices in the remaining butter.
Cut
the bread in half diagonally and distribute the ricotta on each piece. Pour
with honey and a sprinkling of flaky sea salt, then fan some sliced
strawberries on the bread. Arrange the halved strawberries and mint on the
platter.
