traditional salad with chunks of bacon and blue cheese, as well as bits of
thinly sliced onion, packed between a layer of baby spinach.
Ingredients

cup extra virgin olive oil

tablespoons red wine

tablespoon

teaspoons honey
salt
and freshly ground pepper to taste

tablespoon warmed bacon fat reserved from cooking the bacon
8
cups baby spinach
½
cup halved and thinly sliced red onion
4
ounces crumbled blue cheese
1
cup bacon lardons
Instructions
Combine
the olive oil, vinegar,
Toss
in the spinach and red onion to coat with the dressing. Scatter the blue cheese
and bacon over the salad and gently mix. And enjoy!
