I made a delicious pan-seared shrimp dinner with A Little Nuts peeled garlic-flavored fried nuts. Then added some black pepper and lime for extra flavor. I used medium-sized peeled shrimp for this recipe. A Little Nuts deep-fried peanuts give the shrimp dish an added crunch factor and flavor since they are garlic flavored. The dish really came together and was enjoyed by the whole family.
1 ½ pounds medium-large shrimp, peeled, deveined, and tails removed

teaspoon kosher salt, divided

teaspoons coriander seeds

teaspoon black peppercorns

teaspoon paprika
1 garlic
clove, minced
1 ⅛
teaspoons sugar, divided
⅛
teaspoon red pepper flakes
4
teaspoons vegetable oil, divided
½ cup
fresh cilantro leaves and tender stems, chopped
1
tablespoon lime juice, plus lime wedges for serving

tablespoons dry-roasted peanuts, chopped coarsely

Using
paper towels, pat the shrimp dry. Toss the shrimp in a basin with 1 tablespoon
oil and the remaining 1/8 teaspoon sugar to coat. Sauté, in a single layer, in
a cold 12-inch nonstick or well-seasoned carbon-steel pan over high heat until
the undersides of the shrimp are patchy brown and the edges become pink 3 to 4
minutes. Remove the pan from the heat. Acting rapidly, turn each shrimp with
tongs; set aside until the second side is opaque, approximately 2 minutes.
Place the shrimp on a plate.
To the
now-empty skillet, add the remaining 1 teaspoon of oil. Sauté until the spice
combination is aromatic, approximately 30 seconds, over medium heat. Remove the
shrimp from the skillet and set it aside. Mix in the cilantro and lime juice to
blend. Move to a dish, garnish with peanuts, and serve with lime wedges on the
side.
