Huckleberry Pie

  



Huckleberries are a type of wild blueberry that is native to the western United States. They are smaller and sweeter than blueberries, and they have a unique flavor that is both tart and sweet. Huckleberries are often used in pies, jams, and other desserts.

 

This huckleberry pie recipe is a delicious way to enjoy these unique berries. The pie is made with a flaky crust and a sweet and tart filling. It is perfect for a summer dessert or a special occasion.

 

Ingredients

 

1 cup all-purpose flour

1/2 teaspoon salt

1/4 cup shortening

4-6 tablespoons ice water

3 cups fresh huckleberries

1/2 cup granulated sugar

1/4 cup all-purpose flour

1/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt  

1 egg, beaten

Instructions

 

Preheat oven to 425 degrees F (220 degrees C).

Make the crust: In a large bowl, whisk together the flour and salt. Cut in the shortening until the mixture resembles coarse crumbs. Add the ice water, 1 tablespoon at a time, until the dough comes together.

Roll out the dough on a lightly floured surface to a 12-inch circle. Fit the dough into a 9-inch pie plate.

Make the filling: In a large bowl, combine the huckleberries, sugar, flour, cinnamon, nutmeg, and salt.

Pour the filling into the pie crust.

Top with the remaining dough. Crimp the edges to seal.

Cut a few slits in the top crust to vent.

Brush the crust with the beaten egg.

Bake for 15 minutes.

Reduce the oven temperature to 375 degrees F (190 degrees C) and bake for an additional 30-35 minutes, or until the crust is golden brown and the filling is bubbly.

Let the pie cool completely before serving.

Tips

 

If you can't find fresh huckleberries, you can use frozen huckleberries.

You can also use a store-bought pie crust to save time.

To make the pie extra flaky, chill the dough for 30 minutes before baking.

Serve the pie with a scoop of vanilla ice cream or whipped cream.
