Pork and Rice

Pork and rice is a classic dish that is both delicious and easy to make. It is a great option for a weeknight meal or for a special occasion. This recipe uses boneless, skinless pork chops, but you can also use pork tenderloin or pork loin.

Ingredients

1 pound boneless, skinless pork chops

1 tablespoon olive oil

1 onion, chopped

2 cloves garlic, minced

1 (14.5 ounce) can diced tomatoes, undrained

1 (10 ounce) can condensed tomato soup

1 cup water

1 teaspoon salt

1/2 teaspoon black pepper

1 cup cooked rice

Instructions

Heat the olive oil in a large skillet over medium heat. Add the pork chops and cook for 5 minutes per side, or until browned.

Add the onion and garlic to the skillet and cook for 5 minutes, or until softened.

Add the diced tomatoes, tomato soup, water, salt, and pepper to the skillet. Bring to a boil, then reduce heat to low and simmer for 30 minutes, or until the pork is cooked through.

Serve the pork and rice over the cooked rice.

Tips

You can add other vegetables to this dish, such as carrots, celery, or peas.

If you want a thicker sauce, you can add a tablespoon of cornstarch to the skillet.

This dish can be made ahead of time and reheated.
