Salad dishes that can be enjoyed as a whole
meal are a fantastic win in my book. BBQ Ranch Pasta Salad is a delightful
pasta salad that is ideal for a Pot Luck BBQ or to put food on the table. With
its zesty flavor and ease of preparation, this recipe will quickly become a
favorite family supper.
Ingredients
2 Cup
Cooked Chicken diced
1 Can
Black Beans Rinsed and Drained
1 1/2
Cup Corn Rinsed and Drained
1 Bunch
Green Onions Chopped and diced
1/2 Cup
Tomato Diced
1/4 Cup
Ranch Dressing Mix
1 Cup
Sour Cream
1/2 Cup
BBQ Sauce
1 lb
Pasta
2 Cup
Corn Chips Frito Chips
1/2 to 1
Cup Cheddar Cheese
Directions
Roasted
cubed or shredded chicken is called for in this dish. Rotisserie chicken or
leftover chicken works well.
In the
Instant Pot, combine 1 pound of pasta with just enough water to cover, and
pressure cook for 5 minutes with a 5-minute Natural Pressure Release. OR Cook
the pasta according to package directions on the stovetop. To add flavor to
pasta, broth can be used for water.
Drain
the pasta after rinsing it in cold water.
Corn
and beans should be rinsed and drained. Black beans are my favorite. Kidney or
pinto beans can also be used as an alternative.
Tomatoes
and onions, diced.
Inside
a small mixing bowl, combine the Powdered Ranch Dressing Mix and the Sour
Cream. Blend until smooth. Mix in the BBQ sauce. Set aside after combining all
of the ingredients.
Toss
the cubed chicken, beans, corn, onion, tomatoes, and pasta in a large mixing
basin. Toss and combine all of the ingredients.
Mix in
the sauce until well combined.
When
serving, toss in the chips to mix. Optionally, top with cheese.
