A fun and easy dish, that gives you some sweet
and spicy flavors!
Ingredients
1 tablespoon soy sauce
1 teaspoon minced
fresh ginger root
1 teaspoon minced
garlic
1 teaspoon olive oil
1 pound pork
tenderloin, cut into 3/4 inch slices
⅓ cup salsa
1 tablespoon seedless
raspberry preserves
2 tablespoons chopped
fresh cilantro
In a small bowl,
combine the soy sauce, ginger, and garlic.
In a large nonstick
skillet over medium-high heat, heat the oil. Arrange the pork pieces in the pan
in a single layer. Distribute the soy sauce mixture over the meat. Heat the
pork for 3 minutes per side, or until thoroughly caramelized and just slightly
pink in the middle. Transfer the pork to a platter, leaving the juices in
the pan.
Cook and mix the salsa
and raspberry preserves into the drippings in the pan for 30 seconds, or until
somewhat thick. Top the pork pieces with the sauce and cilantro.
