The

from
After the passing of Gloor, the recipe was passed to Alex Kessler, then on to the current bakers today, Brad and Sandy Smith. Although the recipe has traveled over one hundred years, the recipe and the style of making them have remained the same. These famous hand twisted pretzels are truly one of a kind. And after you have some for your self, you will agree!

They truly are a gourmet, artisan baked pretzel, with the perfect crunch. Even being a crunchy hard pretzel, the bite is still perfect. Your not breaking you teeth when going in for a taste. A very nice Bavarian pretzel, that you can dip into your favorite dip, or snack on right out of the bag. The salt on the pretzels, are nice as well, nothing that has you running for a jug of water. They have a nice down home taste, that we all enjoyed. The authentic method of making these pretzels, has remained the same. Each bite is buttery, crisp, and mouth watering. The last bag from, Tell City Pretzel, was their bag of salty caramel flavored pieces. They are still the right size for a dip, with their crunchy texture keeping in tact. This flavor from, Tell City Pretzel, needs nothing really, the flavor speaks for itself. It’s a nice buttery pretzel with the sweet taste of salted caramel. With this pretzel I decided to make a nice Salty Caramel Pretzel Ice Cream Cake. And it turned out perfect! Most of the flavor and crunch to the ice cream cake, came from, Tell City Pretzel.
Salty Caramel Pretzel Ice Cream Cake
INGREDIENTS
FOR
THE CRUST
2 cups
City salty caramel pretzels
2
tablespoons light brown sugar
4
tablespoons unsalted butter, melted and cooled
FOR
THE ICE CREAM LAYERS:
2
quarts high-quality vanilla ice cream
¾ cup
natural, unsweetened peanut butter, well stirred
2
tablespoons honey
TO
FINISH:
1 cup
heavy cream
To get
started:
Preheat
the oven to 350°F. In the bowl of a food processor equipped with a steel blade,
combine pretzels, and brown sugar. Pulse the mixture until it resembles coarse
sand, with a few bigger particles remaining. Add the butter and pulse until
well mixed. 3/4 cup of the mixture should be pressed into the bottom of a
9-inch springform pan. Distribute the remaining mixture on a rimmed baking
sheet in an equal layer. Cook the crust and crumbs for 4 to 5 minutes, or until
light brown and aromatic. It may take a little longer for the crust to color
(another 2 to 3 minutes). Place the pans on a cooling rack to cool fully. Once
the crust and crumbs are cold, transfer 1 quart of the ice cream to a large
mixing basin and break it up with a wooden spoon. Allow the ice cream to soften
at room temperature for about 10 minutes. Drop half of the peanut butter on top
and gently fold it into the ice cream, leaving some ribbons of peanut butter
visible. Spread the ice cream mixture over the cooled crust and carefully
distribute it to the sides of the pan with an offset spatula, being careful not
to pull the crust away from the bottom of the pan. Distribute 1 tablespoon of
honey over the top of the ice cream and swirl it into the surface as best you
can using the point of a knife or wooden skewer. Scatter the top with about 1/2
cup of the pretzel crumbs from the baking sheet and gently push them into the
ice cream. Cover the cake in plastic wrap and store it in the freezer. After
approximately an hour, soften the second quart of ice cream and stir in the
remaining amount of the peanut butter before spreading as before. Sprinkle the
remaining honey over the top and swirl it into the ice cream surface. Cover the
pan with plastic wrap and place it in the freezer for at least 4 hours, and up
to overnight, to cool the cake. Whip the cream to soft peaks just before
serving, then fold in the remaining whole pretzel crumbs. To unmold the cake,
reheat a thin knife or offset spatula in hot water before sliding it along the
cake's edges. Loosen the springform pan's outer ring, dollop whipped cream on
top of the cake, softly distribute it to the edge, and sprinkle the leftover
pretzel mixture around the top edge. Cut into slices and serve.
Tell City Pretzel, are really a wonderful gourmet product. And if you are ready to taste them for your self, you can find them, online, on Amazon, and on HSN.
