Coffee-Rubbed Lamb Chops
1/4 Grumpy
Man Coffee
1 Tbsp
smoked paprika
1 Tbsp
brown sugar
1/2
Tbsp salt
1/2
Tbsp ground pepper
1/2
Tbsp dried oregano
1/2
Tbsp ground coriander
1/2
Tbsp cayenne pepper
1 tsp
dried mustard
1 tsp
garlic powder
1 tsp
cumin
1/2 tsp
ground thyme
1/2 tsp
ground ginger
2-4
lamb chops
olive
oil
Blueberry
Balsamic Reduction
1 Tbsp
olive oil
1/4 cup
onion, chopped
1
garlic clove, minced
1 cup
fresh blueberries
1/2 cup
balsamic vinegar
1 cup
vegetable broth
1/2 tsp
salt
1/4 tsp
ground pepper
1 Tbsp
fresh basil
1 Tbsp
unsalted margarine
In a
dish, combine all of the spices and put them aside.
Drizzle
olive oil over the lamb chops after patting them dry with a paper towel. Rub a
spoonful of the spice rub into each chop. Repeat the rubbing in of the spices
on the other side.
Refrigerate
the lamb chops for 1 hour in a plastic storage bag. After an hour, remove the
chops from the fridge and let them come to room temperature on the counter for
about 30 minutes. Heat about 1/4 cup olive oil in a heavy pan over medium-high
heat until the oil is hot. When the oil begins to shimmer, you know it's hot
enough. Placed the chops with care. Place the chops in the heated pan with
care.
Heat
for 3 minutes on each side, or until the lamb chops are medium-rare. Whenever
the chops are done, turn the pan so that the oil pools up, then spoon the hot
oil over the meat to baste.
Balsamic Blueberry Reduction
1
tablespoon olive oil in a large pot over medium heat When the oil is heated,
add the chopped onions and cook for 2 minutes, or until the onions are shiny.
Cook for another 30 seconds after adding the garlic. Cook for 3 minutes,
stirring often, with the blueberries in the pan. Bring the balsamic vinegar to
a boil in the pan. Continue to boil the balsamic until it is nearly totally
reduced, about 5 minutes. Bring the sauce to a boil with the vegetable stock,
salt, and pepper. Reduce the heat to a simmer for 5 minutes after adding the
basil. Remove the sauce from the heat, add the margarine, and swirl to
dissolve. Serve over lamb chops and
enjoy!
Preheat
the oven to 450 degrees Fahrenheit.
Spray a
baking sheet with nonstick cooking spray and push the dough onto it. Set aside
the dough after drizzling it with a few teaspoons of olive oil.
Over
medium heat, add a couple more tablespoons of olive oil and the chopped red
onion. Add the water to the pan and cook the onions for 10 minutes, stirring
regularly. Sprinkle the arugula and sliced pear on top, followed by the
caramelized red onions. Drizzle the focaccia with a little extra olive oil and
bake for 25 minutes, or until brown.
