The Vegan Knife baking mix review

The Vegan Knife is a gluten-free, vegan, and allergy-friendly cupcake/cake and donut baking mix that everyone will love! Julie feels that everyone, regardless of food sensitivities, should be able to enjoy a delicious piece of cake or a doughnut. Julie was inspired by this philosophy to make all-inclusive baking mixes that were "Free From" the top eight food sensitivities.

They are simple to use with few ingredients that you need to add, and no mixer!




By just adding your own dairy-free milk, oil, and vanilla you can create some yummy confections. What makes this baking mix's so special, well they are Vegan, Gluten-Free, Dairy-Free, Nut-Free, and Egg-Free. All of The Vegan Knife baking mixes are great for what every type of diet you follow. Full of flavor, and so fun to make!





The first confection I made was with The Vegan Knife chocolate cupcake and cake mix. I made a yummy chocolate bunt cake with a chocolate glaze. The ingredients are Ingredients: Pure cane sugar, Garbanzo bean flour, Potato starch, Corn starch, Cocoa, Sorghum flour, Tapioca flour, Baking powder sodium acid pyrophosphate, sodium bicarbonate, cornstarch, monocalcium phosphate, and Salt. In twenty minutes you have an amazing chocolate cake that you would never know was vegan. The Vegan Knife, only use's the best ingredients in this baking mix as they do all of them. Anytime your chocolate craving is driving you crazy, it's nice to know you can now enjoy cupcakes or cakes using, The Vegan Knife. My bunt cake was super moist and light, and the chocolate flavor was mouth-watering.




Ingredients

FOR THE BUNDT CAKE


The Vegan Knife chocolate cupcake and cake mix

1 cup hot, brewed coffee

1 cup soy, oat, almond, cashew, or light coconut milk

5.3 ounces vegan plain or vanilla-flavored yogurt of choice (2/3 cup)

1/2 cup avocado oil

1 1/4 cups cane sugar

1 teaspoon vanilla extract

 

FOR THE GANACHE GLAZE

1 1/2 cups (8 oz) vegan semi-sweet chocolate chips or morsels

1 cup soy, oat, almond, cashew, or light coconut milk

Heat the oven to 350°F and butter or oil a bundt cake pan.

Add The Vegan Knife chocolate baking mix to the mixing dish. Whisk together the coffee, milk, yogurt, oil, sugar, and vanilla extract in a separate dish. Combine the wet and dry ingredients in a mixing bowl. Pour the mixture into the bundt cake pan that has been prepared. Cook for 50-55 minutes, or until the top is set and a toothpick inserted into the center comes out nearly totally clean. To achieve a uniform rise, rotate the cake pan halfway during baking time.

Let the cake cool in the pan for an hour after it has finished baking. Then, carefully flip the pan on a cooling rack to release the cake. Allow the cake to cool until it has reached room temperature. Set the cooling rack with the cake on it on top of a couple pieces of parchment paper or aluminum foil. Pour the ganache over the cake while it is still warm. Allow the cake to cool for a few more hours, or until the ganache icing has hardened.





The next bag from The Vegan Knife was their birthday cake cupcake and cake mix. Made with the same quality ingredients of Ingredients: Pure cane sugar, Garbanzo bean flour, Potato starch, Sorghum flour, Tapioca flour, White rice flour, Baking powder, sodium acid pyrophosphate, sodium bicarbonate, cornstarch, monocalcium phosphate,  Salt, Xanthan gum. I filled each cupcake with sugar-free jam, and they were just so delicious. The Vegan Knife baking mix gave me fluffy and light cupcakes that everyone enjoyed to the last crumb. You will be so surprised at how the flavor of this baking mix will exceed your expectations. You don't need to be vegan to enjoy any of The Vegan Knife baking mixes. The best part those with allergies now have yummy baking mixes they can savor.





The last bag from The Vegan Knife was their classic donut mix, cinnamon sugar. Also easy to make, and done in twelve minutes. You will not miss having fried donuts at all, after all, baked ones taste just as good and much healthier. Kids and adults enjoyed these vegan donuts! The fun part is the donuts are so easy and fast to make. You just use a spatula to mix and bake, for delicious donuts with a wonderful cinnamon-sugar coating. Every bite down to the last crumb, you can taste the love that went into these baking mixes.
