Tabouli
salad, also known as Tabbouleh, is a simple Mediterranean salad made out of
finely chopped vegetables, fresh parsley, and bulgur wheat that is mixed with
lime juice and olive oil.
INGREDIENTS
½ cup
fine bulgur wheat
4 firm
Roma tomatoes, very finely chopped
1 English
cucumber very finely chopped
2 bunches
parsley, very finely chopped
12-15
fresh mint leaves very finely chopped
4 green
onions, white and green parts, very finely chopped
Salt to
taste
3-4
tablespoon lime juice
3-4
tablespoon extra virgin olive oil
Romaine
lettuce leaves to serve
Soak the
bulgur wheat in water for 5-7 minutes after washing it. Drain thoroughly. Place
aside.

cut the veggies, herbs, and green onions. Place the tomatoes in a colander to
drain any extra liquid.
In a
mixing basin or dish, combine the chopped veggies, herbs, and green onions.
Season with salt and pepper before adding the bulgur. Gently combine.
Then, add
the lime juice and olive oil and combine well.
Refrigerate
the tabouli for 30 minutes to achieve the finest results. Place on a serving
dish. If desired, serve the tabouli with pita and romaine lettuce leaves as
wraps or "boats" for the tabouli.
