Another
simple and attractive Fast side dish created with an exotic yet reasonably
priced squash. It completes a midweek dinner when paired with chicken or fish.
Ingredients
1
tablespoon olive oil
1 clove
garlic, minced
1 chayote
squash, cut into 1/2-inch strips
½
teaspoon salt
ground
black pepper to taste
½
teaspoon white sugar
¼
teaspoon red pepper flakes
1
tablespoon red wine vinegar
In a
medium pan over medium-high heat, heat the olive oil. When the oil is heated,
add the squash, garlic, salt, pepper, sugar, and red pepper flakes. Cook for 2
to 3 minutes, stirring occasionally.
Cook for
2 to 3 minutes longer, until the squash is somewhat wilted but still firm and
crunchy, after adding the vinegar to the squash mixture. Taste and adjust with
extra salt or sugar if necessary.
