The said
cake is known as sad cake because it appears sorrowful. It "falls"
during cooking and becomes a flat cake. This may appear sorrowful, yet it is
juicy, chewy, and sweet. It's doesn't require icing.
Ingredients
2 cups
biscuit baking mix
2 ¼ cups
packed brown sugar
4 eggs
½ cup
vegetable oil
1 cup
flaked coconut
1 cup
chopped pecans
1
teaspoon vanilla extract
Heat the
oven to 350°F. Prepare and flour a 9x13-inch baking pan.
Combine
the biscuit mix, brown sugar, eggs, flaked coconut, chopped pecans, and vanilla
in a large mixing bowl. Pour the mixture into the prepared pan.
Cook for
35 to 40 minutes at 350 degrees. Let the cake to cool prior slicing.
