Soup is a delicious and hearty meal that can be enjoyed any time of year. There are many types of soup, but one of my favorites is creamy tomato soup. This soup is made with a simple combination of ingredients that are easy to find. It is also very versatile and can be served with various toppings, such as grilled cheese, croutons, or shredded cheese.
Ingredients

tablespoon olive oil
1 onion,
chopped
2 cloves
garlic, minced
1 can
(14.5 ounces) diced tomatoes
1 can
(14.5 ounces) tomato sauce
4 cups
vegetable broth
1/2 cup
heavy cream
Salt and
pepper to taste
Instructions
Heat the
olive oil in a large pot over medium heat. Add the onion and garlic and cook
until softened about 5 minutes.
Add the
diced tomatoes, tomato sauce, and vegetable broth to the pot. Bring to a boil,
then reduce heat and simmer for 20 minutes, or until the soup has thickened.
Using an
immersion blender, puree the soup until smooth.
Stir in
the heavy cream and season with salt and pepper to taste.
Serve
hot.
Tips
For a
thicker soup, add a tablespoon of cornstarch to the pot before pureeing.
To make
this soup vegan, use vegetable broth and vegan heavy cream.
This soup
is great for leftovers! It can be stored in the refrigerator for up to 3 days.
