Ingredients
For the cake:
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt

1 teaspoon vanilla extract
1 cup milk
For the filling:
2 cups fresh or frozen fruit, thawed
1/4 cup granulated sugar
1 tablespoon lemon juice
1 tablespoon cornstarch
1/4 cup water
Instructions
Make the cake:
Preheat oven to 350 degrees F (175 degrees C).
Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together flour, baking
powder, and salt.
In a separate bowl, cream together butter and
sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla
extract.
Gradually add dry ingredients to wet
ingredients, alternating with milk, beginning and ending with dry ingredients.
Beat until just combined.
Divide batter evenly between prepared pans.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out
clean.
Let cool in pans for 10 minutes before
inverting onto wire racks to cool completely.
Make the filling:
In a medium saucepan, combine fruit, sugar,
lemon juice, cornstarch, and water. Bring to a boil over medium heat, then
reduce heat and simmer for 2-3 minutes, or until thickened.
Let cool completely before using.
Assemble the cake:
Place one cake layer on a serving plate. Spread
with half of the filling.
Top with second cake layer. Spread with
remaining filling.
Decorate as desired.
Tips
You can use any type of fruit you like for the
filling. I used strawberries, blueberries, raspberries, peaches, and cherries.
If you don't have fresh fruit, you can use
frozen fruit.
You can also use a store-bought cake mix to
make this recipe.
To make the cake even more moist, you can add a
teaspoon of almond extract to the batter.
To make the cake even more flavorful, you can
add a pinch of cinnamon or nutmeg to the batter.
This cake is best served fresh. However, it can
be stored in an airtight container for up to 3 days.
